This recipe is all about the humble red cabbage: It’s super easy to cook with, accessible and purse friendly… What’s not to like? The addition of spices elevates the cabbage’s flavour whilst bringing in the festive cheer one bite at a time! Why not make a batch of this for your Christmas feast this weekend and have the leftovers to amp up your turkey sandwich the next day?


1 tbsp olive oil

2 large red onions, finely chopped

1 star anise

1 cinnamon stick

150ml organic red wine

1 red cabbage

2 tbsp coconut sugar or raw cane sugar

2 apples, finely chopped


Heat the oil in a pan and fry off the onions until soft before adding in the cinnamon and star anise. Add in the red wine, apples, cabbage and sugar, stir well and season before covering with a lid to cook on a simmer for 3 hours. Serve up and you’re good to go!
