  • 3 cups of mixed dried fruit (sultanas, cranberries, chopped dates + apricots work best!)
  • 1 teaspoon ground cinnamo
  • 1 teaspoon ground ginger
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon nutmeg
  • zest and juice from 1 orange
  • 3 tablespoons coconut oil, melted
  • 3 organic eggs
  • 2 cups ground almonds
  • 1 cup hazelnuts
Simply line a cake tin with baking paper and lightly grease with the coconut oil before preheating the oven to 180 degrees.
In a large bowl, combine the dried fruit, spices, vanilla, orange zest + juice, coconut oil and eggs. Add in the almonds and hazelnuts and stir everything together well!
Pour the batter in to your cake tin and bake for an hour until completely cooked through. Allow to cool and dig in!
