RECIPE: NECTARINE CRUMBLE

Is there ANYTHING better than a soul loving, super sweet crumble on an Autumnal day? We think not…
Here we have used nectarines to add a fresh and juicy take on the classic; making the dream dessert when served hot outta the oven with a cold spoonful of creamy yoghurt. We’ve kept the crumble topping gluten and refined sugar free - so you can have your crumble and eat it! 😉
INGREDIENTS
4 large nectarines
2 tbsp chia seeds
1 tsp vanilla extract
1 tsp ground cinnamon
1/3 cup gluten free oats
1/4 cup gluten free flour (brown rice or buckwheat work well!)
2 tbsp maple syrup
2 tbsp butter or coconut oil
METHOD

Preheat the oven to 180 degrees and lightly grease a baking dish with coconut oil or a little butter.

In a medium bowl, combine the peaches with the vanilla extract, chia seeds and 1/2 of the cinnamon.

In another bowl, mix the oats with the flour and the other half of the cinnamon. Slowly add in the syrup and butter or coconut oil (melted) until combined.

Spread the peach mix in to the baking dish and evenly sprinkle the oat mixture on top. Bake for 35-35 minutes until nice and golden. Serve up with yoghurt of your choice and DIG IN!
