RECIPE OF THE WEEK: AVOCADO, SPINACH AND NECTARINE SALAD WITH GINGER DRESSINGSeptember 16, 2015 1:30 pm
As well as being a super quick and easy recipe, this salad is packed with calcium-laden and iron-rich spinach, heart-healthy fats and digestion-aiding fibre with a zingy kick from inflammation-fighting ginger. An intense concoction of goodness!
The lime juice not only adds a hit of body-essential vitamin C, but the tangy flavour goes perfectly with the natural raw honey. Known for relieving indigestion, the mint adds an aromatic flavour as well as possessing strong antiseptic qualities. If all these benefits weren’t enough to tempt you to try out this recipe for yourself, it’s super easy and can be quickly whipped up in a matter of minutes!
Two large handfuls of baby spinach
1/2 avocado, sliced
1 nectarine, sliced
For the ginger dressing:
1 tbsp honey
2 tbsp olive oil
Sprig fresh mint, finely chopped
3 tbsp lime juice
small thumb ginger, minced or finely grated
1. Wash the spinach and place into a large bowl. Slice the avocado and arrange on top.
2. To make the dressing, combine everything in a small dish before drizzling over the salad. Top with the sliced nectarine and serve. Perfect!
