RECIPE OF THE WEEK: FRUITY GRANOLA

This week’s recipe is great for those of us who find ourselves constantly in a rush! Granola is an amazing way to boost your daily intake of protein and essential minerals from the get go and, as it’s prepared in advance, it only takes a minute to serve up in the morning – the perfect way to start your day.

With protein-packed pumpkin seeds and skin-enriching vitamin E from the almonds and sunflower seeds, this granola is not only quick and easy but it’s a super healthy alternative to buttery toast or sugar-laced packet cereals. The fresh nectarine not only adds a juicy contrast in texture, but it’s loaded with antioxidants and more vitamins than your body will know what to do with! Immunity-boosting yoghurt adds a creamy element and is loaded with calcium for keeping your bones and muscles at their best.

We’ve recommend using juicy nectarines for a hydrating start to your day, packed with vitamin C and antioxidants for great skin, but you could certainly add any other fruits to this easy brekkie like blueberries, sliced banana, fresh strawberries… the possibilities are endless!

 


 

INGREDIENTS:

3 tbsp maple syrup
3 tbsp honey
275g rolled oats
20g sunflower seeds
20g sesame seeds
20g chia seeds
60g flaked almonds
60g sunflower seeds
40g desiccated coconut

TO SERVE:

3 tbsp natural yoghurt
One sliced nectarine
Extra honey for drizzling

 


 

METHOD:

1. Preheat oven to 130 degrees. Mix all the ingredients, except for the desiccated coconut, together in a large bowl before tipping onto one or two large baking trays and spreading into a thin layer.

2. Bake for 15 minutes before scattering the desiccated coconut on top. Carefully give the granola a mix and bake for a further 10-15 minutes.

3. Take the granola out of the oven and leave to cool for at least an hour before tipping into an airtight container. It can be stored for up to a month.

4. To serve, carefully dollops three tablespoons of natural yoghurt into the centre of a bowl before scattering with a couple of handfuls of the granola. Arrange the slices nectarine on top before drizzling with half a teaspoon of honey. So quick and easy!
