RECIPE OF THE WEEK!

This cleansing soup will fill you up with its detoxifying nutrients and deliciously fresh flavour PLUS it’s packed with enriching vitamin C and iron. If you’re not as big a fan of coriander as we are, why not try parsley for an equally sumptuous flavour sensation. Start your summer cleanse and sip your way to a goddess bod!

This makes enough for two portions so you can either share it with a friend, or keep it all for yourself. Trust us, once you’ve tasted it, you’ll probably eat it all in one go!

 


 

Ingredients:

1 tbsp coconut oil
1 garlic clove
1 spring onion
1/2 tsp ground coriander
1/2 tsp caraway seeds
600ml boiling water
150g broccoli
100g spinach leaves
and a good handful of fresh coriander, plus extra for garnish

 

Method:

1. In a medium-sized pan, heat the coconut oil and add the spring onions to soften for a minute, followed by the garlic, ground coriander and caraway seeds. After a further minute or so, add the broccoli and water.

2. Once the broccoli starts soften, usually after only a few minutes, add the spinach and let it wilt. Once that’s done, add the coriander and blend until smooth.

3. Serve in a warm bowl with a sprinkling of coriander and enjoy!
