RECIPE: ASIAN STYLE RAW CUCUMBER NOODLES

Is there anything better than a refreshing raw salad packed with flavour and goodness on a hot August day? Especially when it’s made with the seasons best pick: the hydrating, skin nourishing and digestion loving cucumber! This is a super simple noodle salad that goes beautiful with grilled chicken or a tender fillet of pan fried salmon. Did someone say dinner al fresco?

INGREDIENTS:

- 2 cucumbers
- 1 inch freshly grated ginger
- 3 tbsp sesame oil
- 1 tbsp raw honey
- 1 tbsp tamari
- 1/4 fresh chilli, finely chopped
- 1/4 cup fresh coriander, chopped
- 1 spring onion, finely chopped
- 2 tbsp sesame seeds

INSTRUCTIONS:

Use a spiraliser or julienne peeler to create your noodles from the cucumber.
In a bowl, combine all the dressing ingredients (ginger, sesame, honey, tamari, chilli) - before pouring all over your cucumber noodles and mixing everything together well.
Throw in the chopped coriander, spring onion and sesame seeds - then serve up!
