RECIPE: LAVENDER NICE CREAM

Our awesome guest blogger Eleanor May from Green + Aquamarine is sharing her recipe for this delish dairy + refined sugar free nice cream… Plus, it’s INSANELY easy to make! What’s not to like?

With the recent hot weather and humid days, ovens get turned off and cooling foods become much more desirable. If you haven’t already tried banana “nice” cream you are in for a treat. To make, you simply blend frozen banana slices up with other fruit or flavouring of your choice to make a soft serve ice cream. Although easiest to make in a powerful food processor, but I have managed to have success using a hand blender as well. Inspired by all the flowers that are blooming in English gardens at the moment, I have been making lavender nice creams.

Ingredients –serves 2

  • 2 bananas, sliced into chunks and frozen
  • ½ tsp dried lavender
  • Optional: blackcurrant conserve (Meridian do a great refined sugar-free version)

Blend the banana and dried lavender together, and serve immediately. If you have an ice cream maker, you can keep the nice cream in it’s ideal soft-serve consistency by running it through the machine with a little (around 125ml or ½ cup) almond or coconut milk. Scoop the nice cream in to little bowls and, if using, top with blackcurrant conserve or fresh berries.
